Ingredients:
- 2 tablespoons olive oil
- 1 medium onion, chopped.
- 1 green bell pepper, chopped.
- 2 cloves garlic, minced.
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika.
- 1/2 teaspoon chili powder
- 1/4 teaspoon cayenne pepper (optional)
- 1 (28-ounce) can diced tomatoes, undrained
- 1 (15-ounce) can kidney beans, drained and rinsed
- 1 (15-ounce) can black beans, drained and rinsed
- 4 cups cooked and shredded turkey.
- 2 cups beef broth
- 1 cup corn kernels, frozen or canned
- Salt and pepper to taste
- Garnishes: Chopped fresh cilantro, shredded cheese, sour cream, avocado slices, lime wedges
Instructions:
Heat olive oil in a large Dutch oven or pot over medium heat. Add onion and bell pepper, and cook until softened, about 5 minutes.
Add garlic, cumin, paprika, chili powder, and cayenne pepper (if using). Cook for 1 minute, stirring constantly, to release the fragrance of the spices.
Stir in diced tomatoes, kidney beans, black beans, cooked turkey, beef broth, and corn. Bring to a boil, then reduce heat and simmer for 20-25 minutes, allowing the flavors to meld.
Season with salt and pepper to taste. Garnish with chopped cilantro, shredded cheese, sour cream, avocado slices, and lime wedges before serving.
Tips:
- For a thicker chili, mash some of the beans with a fork before adding them to the pot.
- If you don't have leftover turkey, you can substitute cooked ground turkey or chicken.
- Feel free to adjust the level of spice to your liking.
- This chili is even better the next day, so feel free to make a big batch and enjoy it throughout the holiday season.
